Pumpkin Pudding

Servings: 4



Ingredients

  • 1/2 cup Water

  • 1/4 oz Gelatin 

  • 1/2 cup Pureed Pumpkin

  • 1 cup Lite Coconut Milk

  • 1 tbsp Raw Honey

  • 1 tsp Cinnamon


Instructions

  • In a large bowl, add the water and sprinkle the gelatin on top. Allow the gelatin to bloom for five minutes.

  • Meanwhile, add the pumpkin, coconut milk, honey, and cinnamon to a small pot and whisk well. Heat over medium-high heat, whisking occasionally, until the mixture bubbles gently.

  • Whisk the pumpkin mixture into the gelatin mixture. Pour the mixture into ramekins or other heat-safe small bowls.

  • Refrigerate for at least three hours or until set. Enjoy!
