Ingredients
1/2 cup Water
1/4 oz Gelatin
1/2 cup Pureed Pumpkin
1 cup Lite Coconut Milk
1 tbsp Raw Honey
1 tsp Cinnamon
Instructions
In a large bowl, add the water and sprinkle the gelatin on top. Allow the gelatin to bloom for five minutes.
Meanwhile, add the pumpkin, coconut milk, honey, and cinnamon to a small pot and whisk well. Heat over medium-high heat, whisking occasionally, until the mixture bubbles gently.
Whisk the pumpkin mixture into the gelatin mixture. Pour the mixture into ramekins or other heat-safe small bowls.
Refrigerate for at least three hours or until set. Enjoy!
